Method
- Caramelise the sugar in an ovenproof pan, then add butter.
- Pack apple quarters tightly and cook 15 minutes.
- Cover with pastry, tucking in the edges.
- Bake at 200°C for 25 minutes, rest 5 minutes and invert.
