- Whisk yolks, flour and milk, then fold in whites whipped with sugar.
- Melt butter, pour in the batter and scatter raisins.
- When set underneath, flip and tear into pieces with two forks.
- Sprinkle sugar and toss until caramelised; serve with icing sugar and compote.
